Advice needed for Mac Mini purchase

i'm student mid-2007 macbook. use streaming video, playing vlc files, photoshop editing (once month or so), , word/email/internet. it's horrible video streaming, otherwise job.

replacement should able of , display 2 hd monitors. i'm hoping mini last me @ least 4 years os updates.

i'm trying decide between low- , mid-tier mac minis:

low-tier (1.4ghz i5): i'd choose 8gb ram option , install ssd myself.
mid-tier (2.4ghz i5): i'd install ssd.

questions:

mid-tier option give me os x upgrade, 5 years or down road?

low-tier option power both monitors?

there reason drop ~$120 mid-tier option?

get neither , find 1 of previous gen quad i7's. new models garbage price in comparison. (note, new versions aren't able modified user either - not ram).
